Yummy Recipe!

My friend, Catherine Katz @Cuisinicity has shared two of her Eat Like a Woman approved recipes!!!  Both are easy to make!

Catherine LOVES the food that LOVES you back!  Yes, she is an incredible chef, BUT she also has her PhD in neuroscience from Princeton University.  We are both science nerds that love nourishing food!  I hope to have more yummy recipes from Catherine in the near future.

Simply Cinnamon Apples

Simply Cinnamon Apples

Serves: 1½ cups

Ingredients
2 apples, rinsed, with skin on
2½ Tbsp water
½ tsp cinnamon
2 cloves
Instructions
Cut the apples with an apple corer/divider.
Place the sliced apples, water and cloves in a medium sauce pan (just big enough so that the apples are “snuggled” together to keep their moisture)
Sprinkle with cinnamon and simmer covered, for 12-15 minutes. Do NOT stir!
Turn off the heat, keep covered and forget about them until ready to eat!

Keep in your refrigerator so you have a healthy veggie snack anytime of day!
Ingredients
1 cup fat free organic plain Greek yogurt
3 cups organic loose leaf raw baby spinach (pre-washed)
½ tsp dried minced onion
¼ tsp garlic powder
¼ tsp coarse salt
Instructions
Place the raw spinach in a food processor and grind very briefly (you do NOT want it to get like a paste or pesto, it should still be “dry”)
Mix ground-up spinach with the remaining ingredients and chill for at least 30 minutes before serving.
